When you have a kid that is a picky eater.....you will try about anything! I've read the book...that tells how the French get their kids to eat, talked to other mom friends, whose kids gobble anything that is placed in front of them....and in the end I've had to devise my own sneaky tactics for getting some extra veg and vitamins into my son! The popsicle is a perfect way to disguise some healthy greens and to serve up a delicious snack on a stick!
I have an immersion blender and I blend different concoctions depending on what I have on hand.....but I usually add spinach, kale or avocado (I choose one of these vegetables per batch) My base generally consists of banana, frozen mixed berries, almond milk and sometimes I add a little full fat yogurt, a splash of fresh orange juice, lemon or lime. (Taste it and make something that tastes delicious. Experiment and find a consistency that you like) No need to add sugar--it really is sweet enough.)
