When you have a kid that is a picky eater.....you will try about anything! I've read the book...that tells how the French get their kids to eat, talked to other mom friends, whose kids gobble anything that is placed in front of them....and in the end I've had to devise my own sneaky tactics for getting some extra veg and vitamins into my son! The popsicle is a perfect way to disguise some healthy greens and to serve up a delicious snack on a stick!
I have an immersion blender and I blend different concoctions depending on what I have on hand.....but I usually add spinach, kale or avocado (I choose one of these vegetables per batch) My base generally consists of banana, frozen mixed berries, almond milk and sometimes I add a little full fat yogurt, a splash of fresh orange juice, lemon or lime. (Taste it and make something that tastes delicious. Experiment and find a consistency that you like) No need to add sugar--it really is sweet enough.)

We got out of town this weekend and enjoyed our little get-away upstate New York. It seems like we never have enough time to get the the things we need to do done and also find the time to relax and just kick back. This weekend seemed to turn out perfectly and had a good combination of accomplishment and fun. I got so much gardening done. (I managed to clean out, weed and add some color to my flower beds and pots. We took our son, Dash, horseback riding at a local farm (Country Meadows Equine 607-865-8071)that offers riding lessons, trail rides, summer camps and horse shows. The farm is home to goats, pet pigs, horses, chickens, and dogs and I think Dash had just as much fun playing catch with their sweet dog, "Bear" and checking out the other animals as he did riding. We had a fabulous dinner at a local restaurant (Feather and Stone) and enjoyed a local group of musicians that played traditional Irish music. (Not only were our toes tapping.....we even got up and danced!!) We managed to fit in plenty of bike riding and playground time! And on Sunday we returned to Country Meadows Farm to watch a Western horse riding competition that they were hosting.
